5 Favorite healthy fall recipes

One of the best things about Fall is food. It finally gets cozy enough to enjoy hot soups and seasonal veggies and fruit. Practically everything pumpkin and apple in the list. This year I experimented with fall food and a drink and came across these 5 recipes that became favorites really fast.

Also, I have been on a losing weight journal, so everything here is healthy (well in my book anyway).

  • Pumpkin Pasta. This is an old favorite. One of my all-time favorites. Perfect if you want creamy pasta, but not all the calories that come with cream. Here is the recipe.

  • Autumn harvest pasta salad. I made my own sauce with low-calorie mayo, some oregano, and mustard + water. Swapped the gorgonzola for feta. Here is the recipe. Perfect for when you want pasta but got to have a salad. 

  • Pumpkin-pie 10 minute oatmeal. Delicious, very seasonal and completely healthy. Recipe here.

  • A healthier version of this simple and easy apple crumble. The original recipe is here. I kept the butter but changed the sugar for stevia and it turned out great. To be honest, I will still have butter every now and then, but I try to stay as far away from sugar as possible so this was an obvious swap. You can taste the change a little bit, but given that the main ingredient in the crumble is a fruit (apple), I don't mind too much. 

  • Healthy pumpkin spiced latte. Now, this was quite hard to make. Why? I just hate the taste of warmed up almond milk. I've tried to make hot beverages before with almond milk and the result was never good enough. It tastes burned to me. I dunno. If you have a tip please leave it down below. However, I found the solution! Rice milk. A few more calories, but still not milk, and very tasty and rich. The original recipe is here.
